Ingredients

  • Large Russet potatoes - 2
  • Canned chickpeas, drained - 200 grams
  • Greek yogurt - 100 grams
  • Cheddar cheese, grated - 100 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Green onion, chopped - 2 tablespoons
  • Red bell pepper, diced - 50 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and poke several holes in them with a fork to allow steam to escape.
  3. Rub the potatoes with olive oil, salt, and pepper, then wrap them in aluminum foil.
  4. Place the wrapped potatoes directly on the oven rack and bake for 45-50 minutes, until tender when pierced with a fork.
  5. While the potatoes are baking, prepare the filling by mixing the canned chickpeas, Greek yogurt, cheddar cheese, paprika, diced red bell pepper, and chopped parsley in a bowl.
  6. Once the potatoes are done, remove them from the oven and carefully unwrap the foil.
  7. Cut each potato lengthwise, creating a pocket, and gently fluff the insides with a fork.
  8. Spoon the chickpea filling generously into each potato and top with chopped green onions.
  9. Return the stuffed potatoes to the oven for an additional 5-10 minutes to warm the filling and melt the cheese.
  10. Serve hot, garnished with extra parsley if desired.
