- Greek yogurt - 100 grams
- Cheddar cheese, grated - 100 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Green onion, chopped - 2 tablespoons
- Red bell pepper, diced - 50 grams
- Fresh parsley, chopped - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and poke several holes in them with a fork to allow steam to escape.
- Rub the potatoes with olive oil, salt, and pepper, then wrap them in aluminum foil.
- Place the wrapped potatoes directly on the oven rack and bake for 45-50 minutes, until tender when pierced with a fork.
- While the potatoes are baking, prepare the filling by mixing the canned chickpeas, Greek yogurt, cheddar cheese, paprika, diced red bell pepper, and chopped parsley in a bowl.
- Once the potatoes are done, remove them from the oven and carefully unwrap the foil.
- Cut each potato lengthwise, creating a pocket, and gently fluff the insides with a fork.
- Spoon the chickpea filling generously into each potato and top with chopped green onions.
- Return the stuffed potatoes to the oven for an additional 5-10 minutes to warm the filling and melt the cheese.
- Serve hot, garnished with extra parsley if desired.
