- Large baking potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Butter - 30 grams
- Cheddar cheese - 100 grams, grated
- Corn - 100 grams, canned or frozen
- Green olives - 50 grams, sliced
- Pickles - 50 grams, diced
- Sour cream - 100 grams
- Chives - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (390°F).
- Wash and scrub the potatoes thoroughly, then pat them dry.
- Prick each potato several times with a fork and rub them with olive oil, salt, and black pepper.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Carefully slice each potato in half lengthwise and scoop out a small portion of the flesh into a bowl, leaving a thin layer inside the skin.
- Mash the scooped potato with butter and half of the cheddar cheese until creamy.
- Spoon the mashed mixture back into the potato skins and top with corn, green olives, pickles, and the remaining cheese.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Remove from the oven, top with sour cream and sprinkle with chopped chives before serving.
