Ingredients

  • Flounder fillets - 300 grams
  • Olive oil - 3 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1, sliced
  • Zucchini - 1, sliced
  • Lemon - 1, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Oregano - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine olive oil, minced garlic, salt, black pepper, paprika, and oregano.
  3. Add the halved cherry tomatoes, sliced red bell pepper, and zucchini to the bowl, tossing to coat them in the oil and spices.
  4. Place the flounder fillets in a baking dish and arrange the seasoned vegetable mixture around the fish.
  5. Top the fish with lemon slices and sprinkle with chopped parsley.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
  8. Serve hot, garnished with additional parsley if desired.
