- Cherry tomatoes - 200 grams, halved
- Red bell pepper - 1, sliced
- Zucchini - 1, sliced
- Lemon - 1, sliced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Oregano - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine olive oil, minced garlic, salt, black pepper, paprika, and oregano.
- Add the halved cherry tomatoes, sliced red bell pepper, and zucchini to the bowl, tossing to coat them in the oil and spices.
- Place the flounder fillets in a baking dish and arrange the seasoned vegetable mixture around the fish.
- Top the fish with lemon slices and sprinkle with chopped parsley.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
- Serve hot, garnished with additional parsley if desired.
