Ingredients

  • Zucchini - 2 medium-sized
  • Ground beef - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Red bell pepper - 1/2, diced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 2 tablespoons, chopped
  • Cheese (optional) - 50 grams, grated

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  4. Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
  5. Stir in the diced tomato and red bell pepper, along with paprika, salt, and black pepper. Cook for another 5 minutes until the vegetables are tender.
  6. Remove the skillet from heat and mix in the chopped parsley.
  7. Stuff each zucchini half with the meat mixture, pressing down gently.
  8. Place the stuffed zucchini in a baking dish. If desired, sprinkle grated cheese on top.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the zucchini is tender and the cheese is golden.
