- Zucchini - 2 medium-sized
- Ground beef - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Red bell pepper - 1/2, diced
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parsley - 2 tablespoons, chopped
- Cheese (optional) - 50 grams, grated
Steps
- Preheat your oven to 180°C (350°F).
- Cut the zucchini in half lengthwise and scoop out the seeds to create boats.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in the diced tomato and red bell pepper, along with paprika, salt, and black pepper. Cook for another 5 minutes until the vegetables are tender.
- Remove the skillet from heat and mix in the chopped parsley.
- Stuff each zucchini half with the meat mixture, pressing down gently.
- Place the stuffed zucchini in a baking dish. If desired, sprinkle grated cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the zucchini is tender and the cheese is golden.
