- Chicken thighs - 400 grams
- Basmati rice - 150 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Chicken broth - 300 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Dried thyme - 1 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (390°F).
- In a bowl, combine olive oil, paprika, cumin, black pepper, salt, and dried thyme. Add chicken thighs and coat them well with the marinade. Let it sit for at least 15 minutes.
- In a baking dish, add the chopped onion, minced garlic, diced bell pepper, carrot, and tomato. Mix well to combine.
- Place the marinated chicken thighs on top of the vegetable mixture in the baking dish.
- In a saucepan, rinse the basmati rice under cold water until the water runs clear. Add chicken broth to the saucepan and bring it to a boil.
- Once boiling, add the rinsed rice and reduce the heat to low. Cover and cook for about 10 minutes until the rice is tender and the liquid is absorbed.
- After cooking the rice, fluff it with a fork and spread it evenly around the chicken in the baking dish.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the chicken is golden brown and cooked through.
- Garnish with fresh parsley before serving.
