Ingredients

  • Chicken thighs - 400 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Chicken broth - 300 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a bowl, combine olive oil, paprika, cumin, black pepper, salt, and dried thyme. Add chicken thighs and coat them well with the marinade. Let it sit for at least 15 minutes.
  3. In a baking dish, add the chopped onion, minced garlic, diced bell pepper, carrot, and tomato. Mix well to combine.
  4. Place the marinated chicken thighs on top of the vegetable mixture in the baking dish.
  5. In a saucepan, rinse the basmati rice under cold water until the water runs clear. Add chicken broth to the saucepan and bring it to a boil.
  6. Once boiling, add the rinsed rice and reduce the heat to low. Cover and cook for about 10 minutes until the rice is tender and the liquid is absorbed.
  7. After cooking the rice, fluff it with a fork and spread it evenly around the chicken in the baking dish.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until the chicken is golden brown and cooked through.
  10. Garnish with fresh parsley before serving.
