Ingredients

  • Chicken thighs - 400 grams
  • Potatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the olive oil, minced garlic, paprika, dried oregano, salt, black pepper, and lemon juice to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes (or up to 2 hours in the fridge for more flavor).
  4. While the chicken is marinating, peel and cut the potatoes into wedges or cubes.
  5. In a large baking dish, arrange the marinated chicken pieces and scatter the potato wedges around them.
  6. Drizzle any remaining marinade over the potatoes and chicken.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil and continue baking for an additional 15-20 minutes, or until the chicken is cooked through and the potatoes are golden and crispy.
  9. Garnish with chopped fresh parsley before serving.
