Ingredients

  • Chicken thighs - 400 grams
  • Potatoes - 300 grams

  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine olive oil, minced garlic, paprika, oregano, salt, black pepper, and lemon juice.
  3. Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Let them marinate for at least 15 minutes.
  4. While the chicken is marinating, peel and cut the potatoes into wedges.
  5. In a separate bowl, toss the potato wedges with a drizzle of olive oil, salt, and pepper.
  6. In a baking dish, arrange the marinated chicken thighs and scatter the potato wedges around them.
  7. Bake in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the potatoes are golden brown, turning the potatoes halfway through cooking.
  8. Once done, remove from the oven and garnish with chopped fresh parsley before serving.
