Ingredients

  • Zucchini - 200 grams, sliced
  • Eggplant - 200 grams, diced
  • Red bell pepper - 100 grams, chopped
  • Onion - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 200 grams, chopped
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
  3. Add the diced eggplant and cook for about 5 minutes, stirring occasionally, until it begins to soften.
  4. Stir in the sliced zucchini and chopped red bell pepper, cooking for another 5 minutes until they are tender.
  5. Add the chopped tomatoes, salt, black pepper, paprika, and oregano. Mix well and cook for another 5 minutes until the tomatoes start to break down.
  6. Transfer the vegetable mixture to a baking dish, spreading it evenly.
  7. Sprinkle the crumbled feta cheese on top of the vegetables.
  8. Drizzle the remaining tablespoon of olive oil over the dish.
  9. Bake in the preheated oven for 25 minutes, or until the top is golden and bubbly.
  10. Remove from the oven, garnish with chopped parsley, and serve hot.
