- Onion - 100 grams, chopped

- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Feta cheese - 100 grams, crumbled
- Parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
- Add the diced eggplant and cook for about 5 minutes, stirring occasionally, until it begins to soften.
- Stir in the sliced zucchini and chopped red bell pepper, cooking for another 5 minutes until they are tender.
- Add the chopped tomatoes, salt, black pepper, paprika, and oregano. Mix well and cook for another 5 minutes until the tomatoes start to break down.
- Transfer the vegetable mixture to a baking dish, spreading it evenly.
- Sprinkle the crumbled feta cheese on top of the vegetables.
- Drizzle the remaining tablespoon of olive oil over the dish.
- Bake in the preheated oven for 25 minutes, or until the top is golden and bubbly.
- Remove from the oven, garnish with chopped parsley, and serve hot.
