  • Cherry tomatoes - 100 grams
  • Red onion - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and chop the zucchini, bell pepper, eggplant, red onion, and cherry tomatoes into bite-sized pieces.
