- Zucchini - 150 grams
- Red bell pepper - 100 grams
- Yellow bell pepper - 100 grams
- Carrot - 100 grams
- Red onion - 100 grams
- Cherry tomatoes - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Wash and chop the zucchini, red and yellow bell peppers, carrot, and red onion into bite-sized pieces.
- In a large mixing bowl, combine the chopped vegetables with cherry tomatoes.
- Add olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper to the bowl. Toss everything together until the vegetables are well coated.
- Spread the vegetable mixture evenly on a baking tray lined with parchment paper.
- Roast the vegetables in the preheated oven for 25-30 minutes, stirring halfway through, until they are tender and slightly caramelized.
- Once cooked, remove from the oven and let cool for a few minutes.
- Serve warm, garnished with fresh parsley.
