Ingredients

  • Zucchini - 150 grams
  • Red bell pepper - 100 grams
  • Yellow bell pepper - 100 grams
  • Carrot - 100 grams
  • Red onion - 100 grams
  • Cherry tomatoes - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and chop the zucchini, red and yellow bell peppers, carrot, and red onion into bite-sized pieces.
  3. In a large mixing bowl, combine the chopped vegetables with cherry tomatoes.
  4. Add olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper to the bowl. Toss everything together until the vegetables are well coated.
  5. Spread the vegetable mixture evenly on a baking tray lined with parchment paper.
  6. Roast the vegetables in the preheated oven for 25-30 minutes, stirring halfway through, until they are tender and slightly caramelized.
  7. Once cooked, remove from the oven and let cool for a few minutes.
  8. Serve warm, garnished with fresh parsley.
