  • Zucchini - 200 grams
  • Eggplant - 150 grams
  • Bell pepper (red or yellow) - 100 grams
  • Carrot - 100 grams
  • Cherry tomatoes - 100 grams
  • Red onion - 100 grams
  • Garlic - 3 cloves
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and chop the zucchini, eggplant, bell pepper, carrot, and red onion into bite-sized pieces.
  3. In a large mixing bowl, combine the chopped vegetables with the cherry tomatoes and minced garlic.
  4. Drizzle the olive oil over the vegetables and sprinkle with salt, black pepper, thyme, and paprika. Toss well to coat.
  5. Spread the vegetable mixture evenly on a baking tray lined with parchment paper.
  6. Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
  7. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
