- Zucchini - 200 grams
- Eggplant - 150 grams
- Bell pepper (red or yellow) - 100 grams
- Carrot - 100 grams
- Cherry tomatoes - 100 grams
- Red onion - 100 grams
- Garlic - 3 cloves
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried thyme - 1 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Wash and chop the zucchini, eggplant, bell pepper, carrot, and red onion into bite-sized pieces.
- In a large mixing bowl, combine the chopped vegetables with the cherry tomatoes and minced garlic.
- Drizzle the olive oil over the vegetables and sprinkle with salt, black pepper, thyme, and paprika. Toss well to coat.
- Spread the vegetable mixture evenly on a baking tray lined with parchment paper.
- Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
