- Milk - 400 ml
- Cooked rice - 50 g
- Greek yogurt - 100 g
- Sugar - 50 g
- Vanilla extract - 1 tsp
- Cornstarch - 1 tbsp
- Egg - 1 large
- Cinnamon - 1/2 tsp
- Almonds (sliced, for topping) - 10 g
Steps
- Preheat your oven to 180°C (350°F).
- In a saucepan, combine the milk, cooked rice, sugar, and vanilla extract. Heat over medium heat, stirring occasionally until the mixture is warm but not boiling.
- In a small bowl, whisk the cornstarch with a few tablespoons of the warm milk mixture to create a slurry, then slowly add it back into the saucepan, stirring continuously until thickened.
- Remove the saucepan from heat and allow it to cool slightly before stirring in the Greek yogurt and the egg until fully combined.
- Pour the mixture into two individual oven-safe ramekins.
- Sprinkle the tops with cinnamon and sliced almonds.
- Bake in the preheated oven for about 25-30 minutes or until the tops are lightly golden.
- Once done, remove from the oven and allow to cool to room temperature before serving.
