Ingredients

  • Milk - 400 ml
  • Cooked rice - 50 g
  • Greek yogurt - 100 g
  • Sugar - 50 g
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Egg - 1 large
  • Cinnamon - 1/2 tsp
  • Almonds (sliced, for topping) - 10 g

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, combine the milk, cooked rice, sugar, and vanilla extract. Heat over medium heat, stirring occasionally until the mixture is warm but not boiling.
  3. In a small bowl, whisk the cornstarch with a few tablespoons of the warm milk mixture to create a slurry, then slowly add it back into the saucepan, stirring continuously until thickened.
  4. Remove the saucepan from heat and allow it to cool slightly before stirring in the Greek yogurt and the egg until fully combined.
  5. Pour the mixture into two individual oven-safe ramekins.
  6. Sprinkle the tops with cinnamon and sliced almonds.
  7. Bake in the preheated oven for about 25-30 minutes or until the tops are lightly golden.
  8. Once done, remove from the oven and allow to cool to room temperature before serving.
