Ingredients

  • Long-grain rice - 150 grams
  • Water - 350 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper (red or green) - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Tomato paste - 1 tablespoon
  • Vegetable broth - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Rinse the long-grain rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
  3. In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic, diced carrot, and diced bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are slightly softened.
  5. Stir in the chopped tomato and tomato paste, cooking for an additional 3 minutes until the mixture is well combined.
  6. Drain the soaked rice and add it to the skillet, stirring to combine with the vegetable mixture.
  7. Pour in the water, add the vegetable broth, salt, black pepper, turmeric, and paprika. Bring to a gentle boil.
  8. Once boiling, remove from heat and transfer the mixture to a baking dish, spreading it evenly.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. After 25 minutes, remove the foil and bake for an additional 10 minutes or until the rice is tender and the liquid is absorbed.
  11. Once done, remove from the oven and let it cool for a few minutes. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
