- Long-grain rice - 150 grams
- Water - 350 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper (red or green) - 1 medium, diced
- Tomato - 1 medium, chopped
- Tomato paste - 1 tablespoon
- Vegetable broth - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
- In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced bell pepper to the skillet. Sauté for another 5 minutes until the vegetables are slightly softened.
- Stir in the chopped tomato and tomato paste, cooking for an additional 3 minutes until the mixture is well combined.
- Drain the soaked rice and add it to the skillet, stirring to combine with the vegetable mixture.
- Pour in the water, add the vegetable broth, salt, black pepper, turmeric, and paprika. Bring to a gentle boil.
- Once boiling, remove from heat and transfer the mixture to a baking dish, spreading it evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10 minutes or until the rice is tender and the liquid is absorbed.
- Once done, remove from the oven and let it cool for a few minutes. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
