Ingredients

  • Portobello mushrooms - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 100 grams, crumbled
  • Pine nuts - 30 grams, toasted
  • Red pepper flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Clean the portobello mushrooms with a damp cloth and remove the stems.
  3. In a bowl, combine minced garlic, chopped parsley, crumbled feta cheese, toasted pine nuts, red pepper flakes, salt, black pepper, and lemon juice.
  4. Drizzle the olive oil over the mushrooms and rub to coat evenly.
  5. Stuff each mushroom cap with the cheese and herb mixture, pressing down gently to pack it in.
  6. Place the stuffed mushrooms on a baking tray lined with parchment paper.
  7. Bake in the preheated oven for about 20 minutes, or until the mushrooms are tender and the topping is golden.
  8. Remove from the oven and let cool for a few minutes before serving.
