- Portobello mushrooms - 2 large
- Olive oil - 2 tablespoons

- Feta cheese - 100 grams, crumbled
- Pine nuts - 30 grams, toasted
- Red pepper flakes - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (390°F).
- Clean the portobello mushrooms with a damp cloth and remove the stems.
- In a bowl, combine minced garlic, chopped parsley, crumbled feta cheese, toasted pine nuts, red pepper flakes, salt, black pepper, and lemon juice.
- Drizzle the olive oil over the mushrooms and rub to coat evenly.
- Stuff each mushroom cap with the cheese and herb mixture, pressing down gently to pack it in.
- Place the stuffed mushrooms on a baking tray lined with parchment paper.
- Bake in the preheated oven for about 20 minutes, or until the mushrooms are tender and the topping is golden.
- Remove from the oven and let cool for a few minutes before serving.
