Ingredients

  • Lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Potato - 1 medium, grated
  • Turmeric - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Whole wheat burger buns - 2
  • Plain yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the lentils and cook them in boiling water for about 15 minutes or until tender. Drain and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the grated carrot and potato to the skillet, cooking for an additional 5 minutes until softened.
  5. Stir in the cooked lentils, turmeric, cumin, salt, and black pepper, mixing well. Cook for another 5 minutes, then remove from heat and stir in the chopped parsley.
  6. Split the whole wheat buns in half and layer the lentil mixture evenly on the bottom half of each bun.
  7. In a small bowl, mix the plain yogurt with lemon juice and paprika. Spread this mixture over the lentil filling.
  8. Top each burger with the other half of the bun and place them on a baking sheet.
  9. Bake in the preheated oven for 15-20 minutes, until the buns are golden brown.
  10. Remove from the oven and serve warm, optionally garnished with extra parsley.
