Ingredients
- Lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Potato - 1 medium, grated
- Turmeric - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Whole wheat burger buns - 2
- Plain yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Paprika - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Rinse the lentils and cook them in boiling water for about 15 minutes or until tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the grated carrot and potato to the skillet, cooking for an additional 5 minutes until softened.
- Stir in the cooked lentils, turmeric, cumin, salt, and black pepper, mixing well. Cook for another 5 minutes, then remove from heat and stir in the chopped parsley.
- Split the whole wheat buns in half and layer the lentil mixture evenly on the bottom half of each bun.
- In a small bowl, mix the plain yogurt with lemon juice and paprika. Spread this mixture over the lentil filling.
- Top each burger with the other half of the bun and place them on a baking sheet.
- Bake in the preheated oven for 15-20 minutes, until the buns are golden brown.
- Remove from the oven and serve warm, optionally garnished with extra parsley.
