- Zucchini - 300 grams, grated
- Carrot - 100 grams, grated
- Onion - 1 medium, finely chopped
- Chickpea flour - 100 grams
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 2 tablespoons, chopped
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 ml
Steps
- Preheat the oven to 180°C (350°F) and grease a baking dish with a bit of olive oil.
- In a large bowl, combine the grated zucchini, grated carrot, and chopped onion. Mix well and let it sit for 10 minutes to allow the moisture to release.
- After 10 minutes, squeeze out excess moisture from the vegetable mixture using a clean kitchen towel.
- Add chickpea flour, olive oil, chopped parsley, chopped dill, baking powder, salt, black pepper, and water to the bowl. Mix until all ingredients are well combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
