Ingredients

  • Zucchini - 300 grams, grated
  • Carrot - 100 grams, grated
  • Onion - 1 medium, finely chopped
  • Chickpea flour - 100 grams
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 2 tablespoons, chopped
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F) and grease a baking dish with a bit of olive oil.
  2. In a large bowl, combine the grated zucchini, grated carrot, and chopped onion. Mix well and let it sit for 10 minutes to allow the moisture to release.
  3. After 10 minutes, squeeze out excess moisture from the vegetable mixture using a clean kitchen towel.
  4. Add chickpea flour, olive oil, chopped parsley, chopped dill, baking powder, salt, black pepper, and water to the bowl. Mix until all ingredients are well combined.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let it cool for a few minutes before slicing and serving.
