- Lamb shoulder - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 medium, sliced
- Carrot - 1 medium, sliced
- Potato - 1 medium, diced
- Red bell pepper - 1, chopped
- Tomato - 1 large, diced
- Dried oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 200 ml
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-proof dish, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
- Add the sliced onion, carrot, potato, and red bell pepper to the dish, cooking for about 5 minutes until they start to soften.
- Season the lamb shoulder with salt, black pepper, paprika, and dried oregano, then place it in the dish with the vegetables.
- Pour the diced tomato and water over the lamb and vegetables, ensuring everything is evenly distributed.
- Cover the dish with aluminum foil and bake in the preheated oven for 1.5 hours.
- Remove the foil for the last 15 minutes of baking to allow the top to brown slightly.
- Once cooked, remove from the oven and let it rest for 10 minutes before serving.
- Garnish with fresh parsley and serve hot.
