Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Potato - 1 medium, diced
  • Red bell pepper - 1, chopped
  • Tomato - 1 large, diced
  • Dried oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 ml
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-proof dish, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
  3. Add the sliced onion, carrot, potato, and red bell pepper to the dish, cooking for about 5 minutes until they start to soften.
  4. Season the lamb shoulder with salt, black pepper, paprika, and dried oregano, then place it in the dish with the vegetables.
  5. Pour the diced tomato and water over the lamb and vegetables, ensuring everything is evenly distributed.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 1.5 hours.
  7. Remove the foil for the last 15 minutes of baking to allow the top to brown slightly.
  8. Once cooked, remove from the oven and let it rest for 10 minutes before serving.
  9. Garnish with fresh parsley and serve hot.
