Ingredients

  • Large russet potatoes - 2
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Red bell pepper - 1/2, diced
  • Zucchini - 1/2, diced
  • Carrot - 1 medium, diced
  • Red onion - 1/4, diced
  • Cherry tomatoes - 10, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the russet potatoes thoroughly and poke a few holes in each potato with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper, then wrap them individually in aluminum foil.
  4. Place the wrapped potatoes directly on the oven rack and bake for 60 minutes, or until tender.
  5. While the potatoes are baking, prepare the vegetables: in a mixing bowl, combine the diced red bell pepper, zucchini, carrot, red onion, cherry tomatoes, olive oil, paprika, garlic powder, salt, and black pepper.
  6. Spread the vegetable mixture on a baking sheet and roast in the oven for 15-20 minutes until the vegetables are tender and slightly caramelized.
  7. Once the potatoes are cooked, remove them from the oven and carefully unwrap them.
  8. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  9. Spoon the roasted vegetable mixture into the potatoes, drizzle with lemon juice, and sprinkle with fresh parsley before serving.
