- Large potatoes - 2
- Canned tuna in water - 200 grams, drained
- Greek yogurt - 100 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Red onion - 50 grams, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and poke several holes in them using a fork.
- Wrap each potato in aluminum foil and bake in the preheated oven for about 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the tuna mixture by combining the drained tuna, Greek yogurt, olive oil, lemon juice, cherry tomatoes, cucumber, red onion, parsley, salt, and black pepper in a bowl. Mix well.
- Once the potatoes are done, remove them from the oven and unwrap the foil. Let them cool slightly.
- Slice the baked potatoes open lengthwise and gently fluff the insides with a fork.
- Spoon the tuna mixture generously over each potato, allowing it to fill the cavity.
