- Large baking potatoes - 2 (approximately 300g each)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cooked sausage (such as Turkish sucuk or any preferred sausage) - 100g, sliced
- Butter - 1 tablespoon
- Greek yogurt - 100g
- Grated cheese (such as mozzarella or cheddar) - 50g
- Chopped fresh parsley - 2 tablespoons
- Chopped bell peppers (red and green) - 50g
- Sweet corn (canned or frozen) - 50g
Steps
- Preheat the oven to 200°C (390°F).
- Wash the potatoes thoroughly and prick them several times with a fork to allow steam to escape.
- Rub the potatoes with olive oil, salt, and black pepper, then wrap them in aluminum foil.
- Place the wrapped potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, in a skillet over medium heat, sauté the sliced sausage until browned and heated through, about 5-7 minutes. Set aside.
- Once the potatoes are done, remove them from the oven and unwrap them carefully.
- Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Add a tablespoon of butter into each potato, followed by Greek yogurt, sautéed sausage, grated cheese, chopped bell peppers, and sweet corn.
- Garnish with fresh parsley and serve immediately.
