Ingredients

  • Large baking potatoes - 2 (approximately 300g each)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cooked sausage (such as Turkish sucuk or any preferred sausage) - 100g, sliced
  • Butter - 1 tablespoon
  • Greek yogurt - 100g
  • Grated cheese (such as mozzarella or cheddar) - 50g
  • Chopped fresh parsley - 2 tablespoons
  • Chopped bell peppers (red and green) - 50g
  • Sweet corn (canned or frozen) - 50g

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash the potatoes thoroughly and prick them several times with a fork to allow steam to escape.
  3. Rub the potatoes with olive oil, salt, and black pepper, then wrap them in aluminum foil.
  4. Place the wrapped potatoes directly on the oven rack and bake for 45-50 minutes, or until tender when pierced with a fork.
  5. While the potatoes are baking, in a skillet over medium heat, sauté the sliced sausage until browned and heated through, about 5-7 minutes. Set aside.
  6. Once the potatoes are done, remove them from the oven and unwrap them carefully.
  7. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  8. Add a tablespoon of butter into each potato, followed by Greek yogurt, sautéed sausage, grated cheese, chopped bell peppers, and sweet corn.
  9. Garnish with fresh parsley and serve immediately.
