- Green bell pepper, diced - 1/2
- Tomato, diced - 1 medium
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Cumin - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Grated cheese (kosher) - 50 grams
- Sour cream (optional) - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the potatoes thoroughly, then prick them with a fork several times. Wrap them in foil and bake in the preheated oven for about 60 minutes, or until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced green bell pepper to the skillet, cooking for another 3-4 minutes until softened.
- Increase the heat and add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced tomato, salt, black pepper, paprika, and cumin. Cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat and stir in the chopped parsley.
- Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Spoon the meat mixture generously into each potato, then top with grated cheese.
- Return the stuffed potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Serve hot, optionally topped with a dollop of sour cream.
