  • Large Russet potato - 2
  • Ground beef (kosher) - 200 grams
  • Onion, finely chopped - 1 small
  • Green bell pepper, diced - 1/2
  • Tomato, diced - 1 medium
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Cumin - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Grated cheese (kosher) - 50 grams
  • Sour cream (optional) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes thoroughly, then prick them with a fork several times. Wrap them in foil and bake in the preheated oven for about 60 minutes, or until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and diced green bell pepper to the skillet, cooking for another 3-4 minutes until softened.
  5. Increase the heat and add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  6. Stir in the diced tomato, salt, black pepper, paprika, and cumin. Cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat and stir in the chopped parsley.
  7. Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  8. Spoon the meat mixture generously into each potato, then top with grated cheese.
  9. Return the stuffed potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  10. Serve hot, optionally topped with a dollop of sour cream.
