- Large Russet potatoes - 2 pieces
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Butter - 2 tablespoons
- Cheddar cheese, shredded - 100 grams
- Sour cream - 4 tablespoons
- Pickled jalapeños, chopped - 30 grams
- Green onions, sliced - 2 tablespoons
- Corn kernels, cooked - 100 grams
- Ketchup - 2 tablespoons
- Black olives, sliced - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Rub the potatoes with olive oil, salt, and black pepper.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender.
- Once cooked, remove the potatoes from the oven and let them cool for a few minutes.
- Cut each potato in half lengthwise and scoop out a small portion of the flesh into a bowl.
- Add butter, cheddar cheese, and sour cream to the potato flesh and mix until creamy.
- Spoon the mixture back into the potato skins.
- Top with corn, pickled jalapeños, green onions, black olives, and a drizzle of ketchup.
- Serve immediately while hot.
