Ingredients

  • Large Russet potatoes - 2 pieces
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Butter - 2 tablespoons
  • Cheddar cheese, shredded - 100 grams
  • Sour cream - 4 tablespoons
  • Pickled jalapeños, chopped - 30 grams
  • Green onions, sliced - 2 tablespoons
  • Corn kernels, cooked - 100 grams
  • Ketchup - 2 tablespoons
  • Black olives, sliced - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and pierce them several times with a fork.
  3. Rub the potatoes with olive oil, salt, and black pepper.
  4. Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender.
  5. Once cooked, remove the potatoes from the oven and let them cool for a few minutes.
  6. Cut each potato in half lengthwise and scoop out a small portion of the flesh into a bowl.
  7. Add butter, cheddar cheese, and sour cream to the potato flesh and mix until creamy.
  8. Spoon the mixture back into the potato skins.
  9. Top with corn, pickled jalapeños, green onions, black olives, and a drizzle of ketchup.
  10. Serve immediately while hot.
