Ingredients
- Lamb shoulder - 300 grams, cut into 2.5 cm cubes
- Onion - 1 medium, chopped
- Red bell pepper - 1 medium, chopped
- Green bell pepper - 1 medium, chopped
- Tomato - 1 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Yogurt - 2 tablespoons
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped
- Water - 150 ml
Steps
- Preheat your oven to 180°C (356°F).
- In a large bowl, combine lamb cubes, chopped onion, red and green bell peppers, tomato, minced garlic, olive oil, yogurt, tomato paste, paprika, cumin, salt, and black pepper. Mix well to coat the meat and vegetables evenly.
- Cover the bowl and marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Transfer the marinated mixture into a baking dish. Pour water over the top and sprinkle with chopped fresh parsley.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 60 minutes.
- After 60 minutes, remove the foil and bake for an additional 10-15 minutes until the lamb is tender and slightly caramelized.
- Serve hot with rice or flatbread, garnished with extra parsley if desired.
