- Lean lamb or beef - 300 grams, cubed
- Red bell pepper - 1 medium, chopped
- Zucchini - 1 medium, sliced
- Onion - 1 medium, quartered
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Yogurt - 50 grams (for serving)
- Lemon juice - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (392°F).
- In a bowl, combine the cubed meat, olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.
- In a baking dish, arrange the marinated meat, red bell pepper, zucchini, onion, and tomato evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
- After 40 minutes, remove the foil and bake for an additional 10 minutes to allow the meat to brown slightly.
- Serve hot, garnished with fresh parsley and a side of yogurt.
