Ingredients

  • Lean lamb or beef - 300 grams, cubed
  • Red bell pepper - 1 medium, chopped
  • Zucchini - 1 medium, sliced
  • Onion - 1 medium, quartered
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Yogurt - 50 grams (for serving)
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a bowl, combine the cubed meat, olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.
  3. In a baking dish, arrange the marinated meat, red bell pepper, zucchini, onion, and tomato evenly.
  4. Cover the baking dish with aluminum foil and bake in the preheated oven for 40 minutes.
  5. After 40 minutes, remove the foil and bake for an additional 10 minutes to allow the meat to brown slightly.
  6. Serve hot, garnished with fresh parsley and a side of yogurt.
