  • Boneless lamb shoulder - 300 grams
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the diced lamb, olive oil, minced garlic, paprika, cumin, salt, and black pepper. Mix well to coat the meat evenly.
  3. Add the diced red bell pepper, zucchini, sliced onion, and chopped tomato to the bowl, mixing everything together until well combined.
  4. Transfer the mixture to a baking dish and spread it out evenly.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 60 minutes.
  6. After 60 minutes, remove the foil and bake for an additional 15-20 minutes, until the meat is tender and slightly browned.
  7. Remove from the oven, drizzle with lemon juice, and sprinkle with chopped fresh parsley before serving.
