- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the diced lamb, olive oil, minced garlic, paprika, cumin, salt, and black pepper. Mix well to coat the meat evenly.
- Add the diced red bell pepper, zucchini, sliced onion, and chopped tomato to the bowl, mixing everything together until well combined.
- Transfer the mixture to a baking dish and spread it out evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 60 minutes.
- After 60 minutes, remove the foil and bake for an additional 15-20 minutes, until the meat is tender and slightly browned.
- Remove from the oven, drizzle with lemon juice, and sprinkle with chopped fresh parsley before serving.
