Ingredients

  • Fresh white fish fillets (such as sea bass or bream) - 300 grams
  • Cherry tomatoes - 150 grams
  • Zucchini - 1 medium, sliced
  • Red onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Lemon - 1, sliced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, arrange the sliced zucchini, red onion, and cherry tomatoes.
  3. Drizzle 1 tablespoon of olive oil over the vegetables and season with salt and black pepper.
  4. Place the fish fillets on top of the vegetables and drizzle with the remaining olive oil.
  5. Sprinkle the minced garlic, chopped parsley, and dill over the fish.
  6. Top with lemon slices and add a little more salt and pepper to taste.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. Serve hot, garnished with additional fresh herbs if desired.
