- Fresh white fish fillets (such as sea bass or bream) - 300 grams
- Cherry tomatoes - 150 grams
- Zucchini - 1 medium, sliced
- Red onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Lemon - 1, sliced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a baking dish, arrange the sliced zucchini, red onion, and cherry tomatoes.
- Drizzle 1 tablespoon of olive oil over the vegetables and season with salt and black pepper.
- Place the fish fillets on top of the vegetables and drizzle with the remaining olive oil.
- Sprinkle the minced garlic, chopped parsley, and dill over the fish.
- Top with lemon slices and add a little more salt and pepper to taste.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional fresh herbs if desired.
