Ingredients
- Yufka (Turkish pastry sheets) - 4 sheets
- Fresh spinach - 200 grams, chopped
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 50 grams
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Fresh dill - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until translucent.
- Add the chopped spinach to the skillet and cook until wilted. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the cooked spinach and onion mixture with crumbled feta, ricotta, chopped dill, salt, and black pepper. Mix well.
- Lay one sheet of yufka on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush it again with olive oil.
- Spoon a portion of the filling along one edge of the yufka and roll it tightly into a log shape. Place the rolled börek on a baking tray lined with parchment paper.
- Repeat the process with the remaining yufka sheets and filling, arranging them on the tray.
- Brush the tops of the rolled böreks with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
