Ingredients

  • Long-grain rice - 200 grams
  • Chickpeas (cooked) - 100 grams
  • Lamb or beef (diced) - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced meat to the pot and cook until browned on all sides, about 7-10 minutes.
  4. Stir in the minced garlic, diced tomato, cumin, paprika, salt, and black pepper, cooking for another 2-3 minutes until fragrant.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and oil.
  6. Add the cooked chickpeas and water to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until rice is tender and water is absorbed.
  7. Remove from heat and let it sit covered for an additional 10 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh parsley and serve hot.
