- Long-grain rice - 200 grams
- Chickpeas (cooked) - 100 grams
- Lamb or beef (diced) - 150 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced meat to the pot and cook until browned on all sides, about 7-10 minutes.
- Stir in the minced garlic, diced tomato, cumin, paprika, salt, and black pepper, cooking for another 2-3 minutes until fragrant.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and oil.
- Add the cooked chickpeas and water to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until rice is tender and water is absorbed.
- Remove from heat and let it sit covered for an additional 10 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve hot.
