- Long-grain rice - 150 grams
- Fresh artichokes - 2 medium
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Vegetable broth - 400 ml
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Water - 0.5 liters
Steps
- Prepare the artichokes by trimming the outer leaves and cutting them in half. Remove the fuzzy choke from the center and slice the hearts into quarters.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and artichoke hearts to the pot, cooking for an additional 3-4 minutes until the artichokes are slightly tender.
- Stir in the rice, ensuring it is well coated with the oil and mixed with the onions and artichokes. Cook for 2 minutes, stirring occasionally.
- Pour in the vegetable broth and lemon juice. Season with salt and black pepper. Bring to a boil, then reduce the heat to low and cover the pot.
- Simmer for 20 minutes or until the rice is cooked and has absorbed the liquid. Remove from heat and let it sit, covered, for another 10 minutes.
- Fluff the rice with a fork, stir in the chopped dill, and serve warm.
