Ingredients

  • Long-grain rice - 150 grams
  • Fresh artichokes - 2 medium
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 400 ml
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Water - 0.5 liters

Steps

  1. Prepare the artichokes by trimming the outer leaves and cutting them in half. Remove the fuzzy choke from the center and slice the hearts into quarters.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and artichoke hearts to the pot, cooking for an additional 3-4 minutes until the artichokes are slightly tender.
  4. Stir in the rice, ensuring it is well coated with the oil and mixed with the onions and artichokes. Cook for 2 minutes, stirring occasionally.
  5. Pour in the vegetable broth and lemon juice. Season with salt and black pepper. Bring to a boil, then reduce the heat to low and cover the pot.
  6. Simmer for 20 minutes or until the rice is cooked and has absorbed the liquid. Remove from heat and let it sit, covered, for another 10 minutes.
  7. Fluff the rice with a fork, stir in the chopped dill, and serve warm.
