Ingredients

  • Artichokes - 2 large
  • Long-grain rice - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 4 tablespoons
  • Vegetable broth - 250 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the artichokes by cutting off the stems and removing the tough outer leaves. Trim the tops and scoop out the choke using a spoon.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant. Add the rice and toast it for 2-3 minutes, stirring frequently.
  4. Pour in the vegetable broth, add salt and pepper to taste, and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  5. Remove from heat and mix in the chopped dill, parsley, and lemon juice. Let the mixture cool slightly.
  6. Stuff the prepared artichokes with the rice mixture, pressing gently to pack it in. Drizzle the remaining olive oil over the stuffed artichokes.
  7. Place the stuffed artichokes in a pot with a little water (about 100 ml) at the bottom to steam them. Cover and cook on low heat for about 30 minutes or until the artichokes are tender.
  8. Serve warm, drizzled with extra lemon juice and a sprinkle of fresh herbs.
