Ingredients
- Artichokes - 2 large
- Long-grain rice - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 4 tablespoons
- Vegetable broth - 250 ml
- Salt - to taste
- Black pepper - to taste
Steps
- Prepare the artichokes by cutting off the stems and removing the tough outer leaves. Trim the tops and scoop out the choke using a spoon.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant. Add the rice and toast it for 2-3 minutes, stirring frequently.
- Pour in the vegetable broth, add salt and pepper to taste, and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and mix in the chopped dill, parsley, and lemon juice. Let the mixture cool slightly.
- Stuff the prepared artichokes with the rice mixture, pressing gently to pack it in. Drizzle the remaining olive oil over the stuffed artichokes.
- Place the stuffed artichokes in a pot with a little water (about 100 ml) at the bottom to steam them. Cover and cook on low heat for about 30 minutes or until the artichokes are tender.
- Serve warm, drizzled with extra lemon juice and a sprinkle of fresh herbs.
