- Artichoke hearts - 200 grams (canned or cooked)
- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato slices - 1 small, for garnish
- Cucumber slices - 1 small, for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the artichoke hearts, cooked quinoa, breadcrumbs, chopped parsley, chopped dill, minced garlic, lemon juice, olive oil, salt, black pepper, turmeric, and cumin.
- Mash the mixture with a fork until well combined but still slightly chunky.
- Form the mixture into two equal-sized patties.
- Place the patties on a baking sheet lined with parchment paper and bake in the preheated oven for 20 minutes, flipping halfway through.
- Meanwhile, prepare the burger buns by toasting them lightly on a skillet or in the oven.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the baked artichoke patty, tomato slices, and cucumber slices.
- Top with the other half of the bun and serve immediately.
