Ingredients

  • All-purpose flour - 100 grams
  • Semolina - 30 grams
  • Powdered sugar - 50 grams
  • Baking powder - 1 teaspoon
  • Almond extract - 1 teaspoon
  • Coconut oil - 40 grams (melted)
  • Water - 60 ml
  • Syrup: Sugar - 100 grams
  • Syrup: Water - 100 ml
  • Syrup: Lemon juice - 1 tablespoon
  • Chopped almonds - for garnish (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour, semolina, powdered sugar, and baking powder.
  3. Add the melted coconut oil and almond extract to the dry ingredients, mixing until crumbly.
  4. Gradually add water to form a soft dough, then divide the dough into small balls (about 30 grams each).
  5. Place the dough balls on a lined baking sheet, flatten slightly, and make a small indentation in the center of each for the almonds.
  6. Bake in the preheated oven for about 20 minutes or until lightly golden.
  7. While the cookies are baking, prepare the syrup by combining sugar, water, and lemon juice in a saucepan. Bring to a boil and let it simmer for 10 minutes.
  8. Remove the cookies from the oven and immediately pour the hot syrup over them.
  9. Let the cookies soak in the syrup for at least 15 minutes before serving.
  10. Garnish with chopped almonds if desired and serve warm or at room temperature.
