Şekerpare is a delightful Turkish dessert that consists of soft, almond-flavored cookies soaked in a sweet syrup. This vegan version maintains the traditional flavors while being completely plant-based.

- All-purpose flour - 100 grams
- Semolina - 30 grams
- Powdered sugar - 50 grams
- Baking powder - 1 teaspoon
- Almond extract - 1 teaspoon
- Coconut oil - 40 grams (melted)
- Water - 60 ml
- Syrup: Sugar - 100 grams
- Syrup: Water - 100 ml
- Syrup: Lemon juice - 1 tablespoon
- Chopped almonds - for garnish (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour, semolina, powdered sugar, and baking powder.
- Add the melted coconut oil and almond extract to the dry ingredients, mixing until crumbly.
- Gradually add water to form a soft dough, then divide the dough into small balls (about 30 grams each).
- Place the dough balls on a lined baking sheet, flatten slightly, and make a small indentation in the center of each for the almonds.
- Bake in the preheated oven for about 20 minutes or until lightly golden.
- While the cookies are baking, prepare the syrup by combining sugar, water, and lemon juice in a saucepan. Bring to a boil and let it simmer for 10 minutes.
- Remove the cookies from the oven and immediately pour the hot syrup over them.
- Let the cookies soak in the syrup for at least 15 minutes before serving.
- Garnish with chopped almonds if desired and serve warm or at room temperature.
