Ingredients

  • Long-grain rice - 150 grams
  • Orzo pasta - 50 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Chicken or vegetable broth - 400 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear. Drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and orzo pasta to the saucepan, stirring frequently until the orzo turns golden brown, about 2-3 minutes.
  4. Stir in the rinsed rice, coating it well with the oil, garlic, and onion mixture.
  5. Pour in the chicken or vegetable broth, then add salt and black pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the pilav with a fork, garnish with fresh parsley, and serve warm.
