Ingredients

  • Long-grain rice - 100 grams
  • Orzo pasta - 50 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Vegetable broth - 400 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and orzo pasta to the pot, stirring frequently for another 2-3 minutes until the orzo is lightly toasted.
  4. Drain the soaked rice and add it to the pot, stirring well to combine with the onion and orzo mixture.
  5. Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
  6. Once boiling, reduce heat to low, cover the pot with a lid, and simmer for about 15 minutes or until the rice and orzo are cooked and liquid is absorbed.
  7. Remove from heat and let it sit for 5 minutes, covered. Fluff the rice and orzo with a fork.
  8. Stir in the chopped parsley and lemon juice, adjusting the seasoning if necessary before serving.
