Ingredients
- Long-grain rice - 100 grams
- Orzo pasta - 50 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Vegetable broth - 400 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and orzo pasta to the pot, stirring frequently for another 2-3 minutes until the orzo is lightly toasted.
- Drain the soaked rice and add it to the pot, stirring well to combine with the onion and orzo mixture.
- Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
- Once boiling, reduce heat to low, cover the pot with a lid, and simmer for about 15 minutes or until the rice and orzo are cooked and liquid is absorbed.
- Remove from heat and let it sit for 5 minutes, covered. Fluff the rice and orzo with a fork.
- Stir in the chopped parsley and lemon juice, adjusting the seasoning if necessary before serving.
