Ingredients

  • Whole milk - 500 ml
  • Heavy cream - 200 ml
  • Sugar - 100 grams
  • Salep powder - 20 grams
  • Vanilla extract - 1 teaspoon
  • Pistachios - 30 grams (chopped, for garnish)

Steps

  1. In a saucepan, combine the whole milk, heavy cream, and sugar over medium heat. Stir until the sugar has dissolved completely.
  2. Once the mixture is warm, gradually whisk in the salep powder until fully incorporated and smooth.
  3. Continue to cook the mixture, stirring constantly, until it thickens slightly, about 10 minutes. Do not let it boil.
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Transfer the mixture to a shallow dish or ice cream maker and let it cool to room temperature. Then, freeze for at least 4 hours, stirring every hour to achieve the desired texture.
  6. Once frozen, scoop the dondurma into bowls and garnish with chopped pistachios before serving.
