Ingredients
- Whole milk - 500 ml
- Heavy cream - 200 ml
- Sugar - 100 grams
- Salep powder - 20 grams
- Vanilla extract - 1 teaspoon
- Pistachios - 30 grams (chopped, for garnish)
Steps
- In a saucepan, combine the whole milk, heavy cream, and sugar over medium heat. Stir until the sugar has dissolved completely.
- Once the mixture is warm, gradually whisk in the salep powder until fully incorporated and smooth.
- Continue to cook the mixture, stirring constantly, until it thickens slightly, about 10 minutes. Do not let it boil.
- Remove the saucepan from heat and stir in the vanilla extract.
- Transfer the mixture to a shallow dish or ice cream maker and let it cool to room temperature. Then, freeze for at least 4 hours, stirring every hour to achieve the desired texture.
- Once frozen, scoop the dondurma into bowls and garnish with chopped pistachios before serving.
