- Fresh tomatoes - 2 medium (approximately 300 grams), diced
- Onion - 1 small (approximately 100 grams), finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (500 ml)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced tomatoes to the pot, cooking until the tomatoes break down and release their juices, about 5-7 minutes.
- Stir in the soaked and drained rice, coating it well with the tomato mixture for about 2 minutes.
- Pour in the vegetable broth and add salt, black pepper, and red pepper flakes if using. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
