- Pasta (spaghetti or penne) - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh tomatoes - 400 grams, diced
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - a handful, torn
- Parsley - a handful, chopped
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the diced tomatoes and red pepper flakes, and cook for about 10-12 minutes until the tomatoes break down and create a sauce.
- Season the tomato sauce with salt and black pepper to taste.
- Once the pasta is cooked, drain it and reserve a little pasta water.
- Add the drained pasta to the skillet with the tomato sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
- Remove from heat and stir in the torn basil and chopped parsley.
- Serve warm, garnished with additional fresh herbs if desired.
