Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh tomatoes - 400 grams, diced
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil leaves - a handful, torn
  • Parsley - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the diced tomatoes and red pepper flakes, and cook for about 10-12 minutes until the tomatoes break down and create a sauce.
  5. Season the tomato sauce with salt and black pepper to taste.
  6. Once the pasta is cooked, drain it and reserve a little pasta water.
  7. Add the drained pasta to the skillet with the tomato sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
  8. Remove from heat and stir in the torn basil and chopped parsley.
  9. Serve warm, garnished with additional fresh herbs if desired.
