Ingredients

  • Pasta (spaghetti or penne) - 150g
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ripe tomatoes - 400g, chopped
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic to the skillet and cook for another 1-2 minutes, stirring frequently to avoid burning.
  4. Stir in the chopped tomatoes and tomato paste. Cook for about 10 minutes until the tomatoes break down and the sauce thickens.
  5. Season the sauce with dried oregano, salt, and black pepper. Adjust the seasoning to taste.
  6. Add the cooked pasta to the skillet and toss to combine, allowing the pasta to soak up the sauce for 2-3 minutes.
  7. Remove from heat and stir in the fresh basil and nutritional yeast, if using.
  8. Serve hot, garnished with additional basil if desired.
