  • Fresh ripe tomatoes - 600 grams
  • Onion - 1 medium, diced (about 150 grams)
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced (about 60 grams)
  • Green bell pepper - 1 small, diced (about 100 grams)
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Dried basil - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a medium pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot and green bell pepper, cooking for an additional 5 minutes until softened.
  5. Chop the fresh tomatoes and add them to the pot along with the vegetable broth.
  6. Season with salt, black pepper, and dried basil. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.
  7. Remove from heat and blend the soup until smooth using an immersion blender or a countertop blender.
  8. Return the soup to the pot and reheat gently if needed.
  9. Serve hot, garnished with fresh parsley.
