Ingredients
- Vine leaves - 12 pieces (canned or jarred, rinsed)
- Rice - 100 grams (short or medium-grain)
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Mint leaves - 1 tablespoon, chopped
- Pine nuts - 30 grams, toasted
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Water - 200 milliliters
Steps
- Rinse the rice under cold water until the water runs clear. Soak the rice in warm water for 20 minutes, then drain.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
- Add the drained rice to the pan with the onions, stirring for another 2 minutes. Add the pine nuts, parsley, dill, mint, cinnamon, salt, and pepper, mixing well.
- Pour in 200 milliliters of water and bring to a boil. Reduce the heat to low, cover, and simmer for about 10-12 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let cool for a few minutes.
- Prepare the vine leaves by placing them vein-side up. Take about 1-2 tablespoons of the rice mixture and place it at the base of each leaf. Fold in the sides and roll tightly from the base to the tip.
- In a pot, arrange the dolmas seam-side down. Drizzle with the remaining olive oil and lemon juice. Add enough water to cover the dolmas and place a heavy plate on top to keep them submerged.
- Cover the pot and simmer on low heat for about 30-35 minutes. Once cooked, let them sit for 10 minutes before serving.
