Dolma (Vegan)

Ingredients
- Grape leaves - 250 grams (about 30-35 leaves)
- Rice (short-grain or medium-grain) - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, grated
- Fresh parsley - 2 tablespoons, finely chopped
- Fresh mint - 1 tablespoon, finely chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Vegetable broth - 200 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
Steps
- Rinse the grape leaves in cold water and soak them in hot water for about 15 minutes to soften. Drain and set aside.
- In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the grated tomato, rice, parsley, mint, salt, black pepper, and cinnamon. Cook for another 2-3 minutes, stirring occasionally.
- Add the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
- Lay a grape leaf flat on a clean surface, vein side up. Place about 1 tablespoon of the rice mixture at the base of the leaf. Fold in the sides and roll up tightly from the base to the tip. Repeat with the remaining leaves and filling.
- In a large saucepan, arrange the stuffed grape leaves seam side down. Drizzle with the remaining olive oil and lemon juice. Add enough water to cover the dolmas halfway.
- Cover the pan with a lid and bring to a gentle simmer. Cook for about 30 minutes, until the leaves are tender.
- Remove from heat and let them cool slightly before serving. Enjoy warm or at room temperature.
