Ingredients
- Bell peppers - 2 large
- Ground beef - 150 grams
- Long-grain rice - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Wash the bell peppers, cut the tops off, and remove the seeds. Set aside.
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the ground beef to the pan and cook until browned, breaking it apart with a spoon.
- Stir in the rice, diced tomato, parsley, mint, salt, black pepper, cinnamon, and paprika. Mix well and cook for another 2-3 minutes.
- Remove the pan from heat and add vegetable broth and lemon juice. Stir until combined.
- Stuff each bell pepper with the meat and rice mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. Drizzle with the remaining olive oil.
- Cover the dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and slightly charred.
- Serve hot, optionally with a side of yogurt.
