Ingredients

  • Long-grain rice - 150 grams
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Pine nuts - 30 grams
  • Raisins - 30 grams
  • Dried mint - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 300 milliliters
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced bell pepper to the pot. Cook for an additional 3 minutes, stirring occasionally.
  4. Stir in the diced tomato, green peas, pine nuts, raisins, dried mint, cinnamon, salt, and black pepper. Cook for another 5 minutes until the vegetables are tender.
  5. Drain the soaked rice and add it to the pot, stirring well to combine all the ingredients.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
