- Long-grain rice - 150 grams
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Pine nuts - 30 grams
- Raisins - 30 grams
- Dried mint - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 300 milliliters
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced bell pepper to the pot. Cook for an additional 3 minutes, stirring occasionally.
- Stir in the diced tomato, green peas, pine nuts, raisins, dried mint, cinnamon, salt, and black pepper. Cook for another 5 minutes until the vegetables are tender.
- Drain the soaked rice and add it to the pot, stirring well to combine all the ingredients.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
