- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1/2, diced
- Cherry tomatoes - 100 grams, halved
- Shrimp - 100 grams, cleaned and deveined
- Calamari - 100 grams, sliced
- Fish fillet (white fish) - 100 grams, cut into bite-sized pieces
- Parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced bell pepper and halved cherry tomatoes to the pot, cooking for another 3-4 minutes until softened.
- Stir in the shrimp, calamari, and fish pieces. Season with salt, black pepper, and paprika, cooking until the seafood is just cooked through, about 5 minutes.
- Drain the soaked rice and add it to the pot. Stir well to combine all ingredients.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the water is absorbed.
- Remove from heat and let the pilaf sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
