Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2, diced
  • Cherry tomatoes - 100 grams, halved
  • Shrimp - 100 grams, cleaned and deveined
  • Calamari - 100 grams, sliced
  • Fish fillet (white fish) - 100 grams, cut into bite-sized pieces
  • Parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the diced bell pepper and halved cherry tomatoes to the pot, cooking for another 3-4 minutes until softened.
  4. Stir in the shrimp, calamari, and fish pieces. Season with salt, black pepper, and paprika, cooking until the seafood is just cooked through, about 5 minutes.
  5. Drain the soaked rice and add it to the pot. Stir well to combine all ingredients.
  6. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and the water is absorbed.
  7. Remove from heat and let the pilaf sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
