- Egg - 1 large
- Olive oil - 2 tablespoons
- Water - 3 tablespoons
- Salt - 1/2 teaspoon
- Shrimp, peeled and deveined - 100 grams
- Fish fillet (such as cod or salmon) - 100 grams, cut into small pieces
- Mussels, cleaned - 100 grams
- Cherry tomatoes, halved - 100 grams
- Red onion, thinly sliced - 1 small
- Garlic, minced - 2 cloves
- Parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, combine almond flour, egg, olive oil, water, and salt. Mix until a dough forms.
- Knead the dough on a lightly floured surface until smooth, then roll it out into an oval shape, about 1/2 cm thick.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- In a skillet, heat a little olive oil over medium heat. Sauté the red onion and garlic until fragrant.
- Add the shrimp, fish, and mussels to the skillet, cooking until the shrimp turn pink and mussels open, about 5-7 minutes.
- Stir in cherry tomatoes, parsley, lemon juice, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.
- Spread the seafood mixture evenly over the dough, leaving a small border around the edges.
- Fold the edges of the dough over the seafood to create a crust.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
- Remove from the oven, let it cool slightly, then slice and serve.
