- Lettuce - 2 leaves (shredded)
- Gluten-free pita bread - 2 pieces
- Tahini - 2 tablespoons
Steps
- In a bowl, mix together olive oil, yogurt, minced garlic, paprika, cumin, black pepper, salt, and lemon juice to create a marinade.
- Cut the chicken thighs into thin strips and add them to the marinade, ensuring all the pieces are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
- Preheat the grill or a grill pan over medium-high heat.
- Remove the chicken from the marinade and thread the pieces onto skewers.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
- While the chicken is grilling, prepare the fresh vegetables by slicing the tomato, cucumber, and red onion.
- Once the chicken is done, remove it from the grill and let it rest for a few minutes.
