  • Lemon juice - 1 tablespoon
  • Tomato - 1 medium (sliced)
  • Cucumber - 1 medium (sliced)
  • Red onion - 1 small (sliced)
  • Lettuce - 2 leaves (shredded)
  • Gluten-free pita bread - 2 pieces
  • Tahini - 2 tablespoons

Steps

  1. In a bowl, mix together olive oil, yogurt, minced garlic, paprika, cumin, black pepper, salt, and lemon juice to create a marinade.
  2. Cut the chicken thighs into thin strips and add them to the marinade, ensuring all the pieces are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Remove the chicken from the marinade and thread the pieces onto skewers.
  5. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
  6. While the chicken is grilling, prepare the fresh vegetables by slicing the tomato, cucumber, and red onion.
  7. Once the chicken is done, remove it from the grill and let it rest for a few minutes.
