- Chicken thighs - 300 grams
- Greek yogurt - 100 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Cucumber - 100 grams, sliced
- Tomato - 100 grams, diced
- Red onion - 50 grams, thinly sliced
- Lettuce leaves - 4 large
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, salt, black pepper, and chili powder to create a marinade.
- Cut the chicken thighs into thin strips and add them to the marinade. Mix well to ensure all pieces are coated. Cover and refrigerate for at least 1 hour (or overnight for best results).
- Preheat your grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and thread the strips onto skewers.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
- While the chicken is grilling, prepare the vegetables by slicing the cucumber, dicing the tomato, and thinly slicing the red onion.
- Once the chicken is done, remove it from the skewers and assemble your kebabs by placing the grilled chicken on top of lettuce leaves and adding cucumber, tomato, onion, and parsley.
- Serve immediately with a drizzle of olive oil or your choice of low-carb dressing.
