- Lamb shoulder - 200 grams, diced
- Beef bones - 100 grams
- Water - 1.5 liters
- Onion - 1 medium, quartered
- Carrot - 1 medium, cut into chunks
- Celery stalk - 1, cut into chunks
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon
- Rice - 1/4 cup, rinsed
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Yogurt - 2 tablespoons, for serving
Steps
- In a large pot, combine the diced lamb, beef bones, and water. Bring to a boil over high heat, skimming off any foam that rises to the surface.
- Add the quartered onion, carrot, celery, and minced garlic to the pot. Season with salt, black pepper, and red pepper flakes. Reduce the heat to low and let it simmer for about 60 minutes.
- After 60 minutes, remove the meat and bones from the pot. Strain the broth to remove the vegetables and impurities, returning the clear broth to the pot.
- Shred the cooked lamb into bite-sized pieces, discarding any bones. Add the shredded lamb back into the pot along with the rinsed rice.
- Cook for an additional 20 minutes, or until the rice is tender. Adjust seasoning with additional salt or pepper if needed.
- Stir in the lemon juice and chopped parsley just before serving. Ladle the soup into bowls and serve hot with a dollop of yogurt on top.
