Ingredients

  • cooked chickpeas - 240 grams
  • onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • fresh parsley - 30 grams, chopped
  • cumin powder - 1 teaspoon
  • coriander powder - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • red chili flakes - 1/2 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • all-purpose flour - 40 grams
  • olive oil - 2 tablespoons (for frying)
  • pita bread - 2 pieces
  • sliced cucumber - 100 grams
  • sliced tomato - 100 grams
  • lettuce leaves - 2

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until they are mostly smooth but still have some texture.
  2. Add the chopped onion, minced garlic, parsley, cumin, coriander, smoked paprika, red chili flakes, salt, black pepper, and all-purpose flour to the mashed chickpeas. Mix well until combined.
  3. Divide the mixture into 4 equal parts and shape each part into a patty about 1.5 cm thick.
  4. Heat olive oil in a non-stick pan over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, warm the pita bread in a separate pan or microwave.
  6. Assemble the burgers by placing a chickpea patty in each pita, topped with sliced cucumber, tomato, and lettuce.
  7. Serve warm and enjoy your homemade Chickpea Kebabs!
