  • Walnuts - 100 grams
  • Honey - 50 grams
  • Cinnamon - 1/2 teaspoon
  • Clove powder - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Pistachios (for garnish) - 10 grams

Steps

  1. Preheat your oven to 200°C (392°F).
  2. Cut the red bell peppers in half, remove the seeds, and place them cut side down on a baking tray.
  3. Roast the peppers in the oven for 20 minutes, or until the skins are blistered and charred.
  4. While the peppers are roasting, toast the walnuts in a dry skillet over medium heat for about 5 minutes, stirring frequently to prevent burning.
  5. Once toasted, chop the walnuts coarsely and mix them in a bowl with honey, cinnamon, clove powder, and vanilla extract.
  6. Remove the roasted peppers from the oven and let them cool for a few minutes before peeling off the skins.
  7. Heat olive oil in the skillet and gently fry the peeled pepper halves for about 2 minutes on each side to enhance their flavor.
  8. Stuff each pepper half with the walnut mixture and arrange them on a serving plate.
  9. Garnish with crushed pistachios before serving.
